Baked Alaska

While we were in New Mexico, my mom and I tried out some new recipes. One of them was Baked Alaska. We modified it a little, but it was yummy! Allison asked me to take some pictures so she could see how we did it. So, here it is...

Layer 4 pints of ice cream into a glass bowl (freezing for a few minutes before adding each layer). Then, cover with plastic wrap and let freeze for at least 4 hours.

Make a brownie mix in an 8 inch circle cake pan that has been lined with foil. After it cooks, remove the brownie from the pan and allow to cool.About 30 minutes before you want to serve your dessert, put the brownie into a 9 inch pie dish.Invert the ice cream on to the top of the brownine, cover with plact wrap and put back into the freezer.While the brownie and ice cream are in the freezer, mix 8 egg whites and a pinch of salt until foamy.Add one teaspoon of lemon juice.
Gradually add one cup of sugar and mix until stiff peaks form.


Remove the brownie/ ice cream base from the freezer and take off the plastic wrap.
Add meringue to top of base.

Spread over base, sealing at edges. Bake at 450 dgrees for 5 minutes or until meringue turns to golden brown.

Eat up!!

That looks so good and not incredibly difficult! I will definitely be trying it. Thanks for the pictures! Now I want to see pictures from the rest of the trip!
